- 1 sweet onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh ripe tomatoes, chopped (or canned tomatoes)
- Sea salt, to taste
- 4 cups vegetable or chicken stock
- Handful of fresh basil leaves
- Balsamic vinegar or sugar, to taste
- Crème fraîche, for serving (optional)
Instructions
- In a large skillet over medium heat, drizzle olive oil. Add chopped onions and sauté until translucent.
- Stir in minced garlic and continue cooking for an additional minute.
- Add the chopped tomatoes, sprinkle with sea salt, and let cook undisturbed for about 10-15 minutes until caramelized and bursting.
- Pour in the vegetable or chicken stock, scraping up any bits stuck to the bottom. Bring to a gentle simmer and let it bubble for about 20-30 minutes.
- Add fresh basil leaves in the last 5 minutes of simmering.
- Using an immersion blender, purée the soup until creamy and smooth.
- Adjust seasoning with balsamic vinegar or sugar if needed.
- Ladle into bowls, drizzle with olive oil, top with fresh basil, and a dollop of crème fraîche if desired.
Notes
For a richer flavor, consider adding sautéed shiitake or cremini mushrooms to the onions.
