Ingredients

  • 4 cups fresh ripe tomatoes, chopped (or canned tomatoes)
  • Sea salt, to taste
  • 4 cups vegetable or chicken stock
  • Handful of fresh basil leaves
  • Balsamic vinegar or sugar, to taste
  • Crème fraîche, for serving (optional)

Instructions

  1. In a large skillet over medium heat, drizzle olive oil. Add chopped onions and sauté until translucent.
  2. Stir in minced garlic and continue cooking for an additional minute.
  3. Add the chopped tomatoes, sprinkle with sea salt, and let cook undisturbed for about 10-15 minutes until caramelized and bursting.
  4. Pour in the vegetable or chicken stock, scraping up any bits stuck to the bottom. Bring to a gentle simmer and let it bubble for about 20-30 minutes.
  5. Add fresh basil leaves in the last 5 minutes of simmering.
  6. Using an immersion blender, purée the soup until creamy and smooth.
  7. Adjust seasoning with balsamic vinegar or sugar if needed.
  8. Ladle into bowls, drizzle with olive oil, top with fresh basil, and a dollop of crème fraîche if desired.

Notes

For a richer flavor, consider adding sautéed shiitake or cremini mushrooms to the onions.
