This Cheesy Cajun Garlic Chicken Rotini Skillet blends bold Cajun spice, creamy garlic sauce, tender chicken, and rotini pasta for an easy one-skillet dinner that delights.
Ingredients
8 oz rotini pasta, cooked al dente
1 tbsp olive oil
1 lb boneless skinless chicken breast, cubed
1 tbsp Cajun seasoning (adjust to taste)
1 red bell pepper, sliced
½ onion, diced
3 cloves garlic, minced
1 cup heavy cream
1½ cups shredded cheddar cheese
Salt and pepper, to taste
Fresh parsley or green onions, for garnish
Instructions
1. Cook rotini pasta in salted water until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add cubed chicken, season with Cajun spice, and cook until browned. Remove chicken and set aside.
3. In the same skillet, sauté garlic, onions, and bell peppers until tender.
4. Pour in heavy cream, bringing it to a gentle simmer.
5. Stir in shredded cheese until melted and smooth.
6. Return cooked chicken to the skillet and add the pasta.
7. Mix well until everything is coated in the cheesy sauce.
8. Adjust seasoning with salt and pepper.
9. Garnish with chopped parsley or green onions and serve hot.
Notes
For a vegetarian version, substitute chicken with mushrooms or chickpeas.
To make it lighter, use half-and-half or milk thickened with cornstarch.
Best served fresh, but leftovers store well in the fridge for up to 3 days.
Reheat with a splash of cream to bring back the creamy texture.
