Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, salt, and pepper; sauté until golden brown and cooked through, about 5–7 minutes. Remove and slice.
  3. In the same skillet, sauté minced garlic until fragrant, then stir in cream and simmer.
  4. Add pasta and sliced chicken, tossing to combine. Adjust sauce consistency with reserved pasta water if necessary.
  5. Serve garnished with parsley or more Cajun seasoning.

Notes

Always taste your pasta water; it should be pleasantly salty. Use a meat thermometer to ensure chicken is cooked to 165°F.
