Instructions
- Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-5 minutes.
- One by one, incorporate the eggs, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet mixture, alternating with the milk. Mix until just combined.
- Gently fold in the chopped pecans, distributing them evenly throughout the batter.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool completely in the pans before removing them.
- In a saucepan over medium heat, melt the butter and brown sugar. Stir often until the sugar dissolves. Add the milk and bring to a gentle boil. Remove from heat, cool slightly, and then gradually beat in the powdered sugar and vanilla until smooth.
- Place one layer on a serving plate, add a generous amount of frosting on top, and place the second layer over it. Frost the top and sides thoroughly, allowing for some drips to create a charming rustic look.
