Instructions
- In a skillet over medium heat, toast the chopped pecans until fragrant, about 3-5 minutes.
- In a large mixing bowl, whisk together flour, baking powder, brown sugar, salt, and cinnamon.
- In another bowl, combine milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in the toasted pecans.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter for each pancake and cook until bubbles form, then flip and cook until golden brown.
- Serve stacked with maple syrup and a sprinkle of pecans on top.
