Ingredients

  • 2 pounds chicken wings
  • 1/2 cup light brown sugar
  • 1 cup fresh pineapple chunks
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: thyme or cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and pat dry the chicken wings.
  3. In a large bowl, combine brown sugar, minced garlic, soy sauce, olive oil, salt, and pepper.
  4. Add pineapple chunks to the marinade, coating well.
  5. Toss chicken wings in the marinade until fully coated. Let sit for at least 30 minutes or overnight.
  6. Line a baking sheet with parchment paper and place the wings in a single layer.
  7. Bake for 35-40 minutes, flipping halfway through.
  8. Broil for the last 5 minutes for a caramelized finish.
  9. Let rest for a few minutes before serving, garnished with pineapple chunks and herbs.

Notes

Wings can be marinated overnight for deeper flavor. Avoid overcrowding the baking sheet for better crispiness.
