- 1 whole thawed turkey (12–14 lbs recommended)
- 1 cup kosher salt (or 3/4 cup table salt)
- 1/2 cup brown sugar
- 4 quarts water
- 5–7 cloves of garlic, smashed
- 1 tablespoon black peppercorns
- 1 tablespoon allspice berries (or 1 tablespoon essential spices of choice)
- Fresh herbs: rosemary, thyme, sage
- Citrus zest or apple cider (optional)
Instructions
- Prepare the Brine: In a large pot, combine water, kosher salt, and brown sugar. Bring to a boil, stirring until the salt and sugar dissolve, then remove from heat. Add garlic, peppercorns, allspice, and herbs. Allow the brine to cool completely.
- Brine the Turkey: Place your turkey in a large container or brining bag. Pour the cooled brine over the turkey, ensuring it’s fully submerged. Refrigerate for 12-24 hours.
- Rinse the Turkey: After brining, remove the turkey and rinse under cold water.
- Prepare for Roasting: Pat the turkey dry with paper towels. Rub the outside with olive oil and season generously with herbs and spices.
- Roast the Turkey: Preheat your oven to 325°F (165°C). Place the turkey on a rack in a roasting pan and loosely cover with foil. Bake for about 13-15 minutes per pound, removing the foil during the last hour of cooking.
- Check for Doneness: Ensure the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. Let the turkey rest for at least 20 minutes before carving.

Use an instant-read thermometer for accuracy. Pat the turkey dry after brining to ensure crispy skin.
