- 4 Chicken breasts (or thighs), bone-in and skin-on recommended
- 1 cup Fresh blueberries
- 2 tablespoons Fresh thyme
- 3 cloves Garlic, minced
- 2 tablespoons Olive oil or unsalted butter
- 1/2 cup Chicken broth or white wine
Instructions
- Pat the chicken dry with paper towels and season both sides with salt and pepper.
- In a large skillet over medium heat, add olive oil or butter. Once hot, add the chicken, skin-side down, and cook for about 6-7 minutes until golden brown. Flip and cook for another 5-6 minutes. Remove the chicken and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 30 seconds. Toss in fresh blueberries and thyme. Pour in chicken broth or white wine to deglaze, scraping any bits from the bottom of the pan. Let this simmer for 2-3 minutes.
- Return the chicken to the skillet, spooning the blueberry mixture over the top. Cover and let it simmer on low heat for about 15 minutes, or until the chicken reaches an internal temperature of 165°F.
- Serve warm, spooning the blueberry-thyme sauce over the chicken.
Notes
For best results, use a meat thermometer to ensure the chicken is cooked through without being dry. Serve with buttery mashed potatoes or a fresh green salad.
