Ingredients

  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 medium sweet potatoes, diced
  • 2 cans black beans, drained and rinsed
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime juice, or yogurt

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft, about 5 minutes.
  2. Stir in minced garlic and sauté for an additional minute until fragrant.
  3. Sprinkle in cumin and chili powder, toasting the spices for about 30 seconds.
  4. Add diced sweet potatoes and drained black beans to the pot. Pour in vegetable broth and stir to combine.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 20-25 minutes.
  6. For a smoother texture, use an immersion blender to puree part of the soup.
  7. Season with salt and pepper to taste, and add a squeeze of lime if desired.
  8. Ladle the soup into bowls and top with your favorite garnishes.

Notes

For deeper flavors, roast sweet potatoes before adding. Let the soup sit for a few hours or overnight to enhance the flavors.
