- 4 packages cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- ½ cup heavy cream
- 2 teaspoons vanilla extract
- 4 large eggs, at room temperature
- 1 tablespoon lemon juice
- ½ cup unsalted butter, melted
- 1 ½ cups graham cracker crumbs
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs with melted butter and sugar. Press the mixture firmly into the bottom of a springform pan, spreading it evenly. Bake for 10 minutes until lightly golden.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until fully combined.
- Incorporate sour cream, heavy cream, and vanilla extract, blending until creamy. Add eggs one at a time, mixing gently. Finish with lemon juice.
- Pour the filling over the crust and smooth the top with a spatula. Place the springform pan in a larger baking dish, fill with hot water halfway to create a water bath.
- Bake for 1 hour until the edges are set but the center remains slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door ajar for 1 hour. Remove and refrigerate for at least 4 hours, or ideally overnight.
- Before serving, let it sit at room temperature for 30 minutes. Garnish with fresh fruit or chocolate if desired.
