Instructions

  1. Peel and cube the potatoes. In a large pot, cover with cold water, add salt, and bring to a simmer. Cook until fork-tender (about 15-20 minutes).
  2. In a small saucepan, sauté minced garlic with butter over low heat. Add rosemary and thyme, letting them infuse their oils into the butter. Remove from heat and strain if desired.
  3. Drain the cooked potatoes and return them to the pot. Allow to sit over low heat for a minute to remove excess moisture.
  4. Mash the potatoes with a hand masher or electric mixer, gradually incorporating the herbed butter and warmed cream until smooth. Season with salt and pepper.
  5. Gently fold in grated Parmesan cheese and adjust seasoning if needed. Serve warm with an extra drizzle of herb-infused butter.
