Ingredients

- 3 medium Yukon gold or russet potatoes, diced
- 4 cloves fresh garlic, minced
- 1 medium sweet onion, chopped
- 4 cups vegetable or chicken broth
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy cream (or Greek yogurt for a lighter option)
- 1 tablespoon fresh herbs (rosemary, thyme, or chives), chopped
- Salt and pepper, to taste
- 1 tablespoon olive oil or butter
Instructions
- In a large pot, heat olive oil or butter over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic until fragrant.
- Stir in diced potatoes and cook for a few minutes.
- Add broth just to cover the potatoes. Bring to a boil, then reduce to a simmer. Cook until fork-tender (15-20 minutes).
- For a creamy texture, use an immersion blender in the pot or transfer part of the mixture to a blender, purée, and mix back in.
- Reduce heat, gradually stir in shredded cheddar and heavy cream until melted and blended.
- Add herbs, salt, and pepper. Simmer for another 5 minutes.
- Serve hot, garnished with extra herbs or cheese.
Notes
Serve with crusty artisan bread and a green salad. Can be frozen for up to three months.
