Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic until fragrant.
  2. Stir in diced potatoes and cook for a few minutes.
  3. Add broth just to cover the potatoes. Bring to a boil, then reduce to a simmer. Cook until fork-tender (15-20 minutes).
  4. For a creamy texture, use an immersion blender in the pot or transfer part of the mixture to a blender, purée, and mix back in.
