- 2 large potatoes (Yukon Gold or Russet)
- 1 onion (yellow or white)
- 2 cloves garlic (minced)
- 2 carrots (diced)
- 4 cups beef broth (homemade or store-bought)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Optional: 1 cup mushrooms (sliced)
- Optional: herbs (thyme/rosemary)
- Optional: spices (paprika/cayenne pepper)
Instructions
- Heat a large pot over medium heat with olive oil. Sauté chopped onions and carrots until soft, then stir in minced garlic and cook until fragrant.
- Push the vegetables to the sides of the pot and add ground beef. Brown the meat, seasoning with salt, pepper, and paprika.
- Add diced potatoes and optional mushrooms; sauté for a few minutes.
- Pour in beef broth to cover the ingredients and simmer until potatoes are tender, about 20 minutes.
- Stir in heavy cream and half of the shredded cheese until melted and creamy.
- Adjust seasoning with salt and pepper; garnish with remaining cheese and fresh herbs before serving.
Notes
For a vegetarian option, use plant-based ground beef and substitute heavy cream with milk. Serve with crusty bread or a fresh salad.
