  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream

Instructions

  1. Prepare the Apple Pie Filling: Peel, core, and dice the apples, sautéing them in butter with brown sugar, cinnamon, nutmeg, and lemon juice until softened for about 5-7 minutes. Set aside to cool.
  2. Make the Cupcake Batter: Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners. Cream butter and sugar, add eggs and vanilla. Combine flour, baking powder, and salt in a separate bowl, then mix alternating with milk.
  3. Fill the Cupcakes: Fill the liners halfway with batter, top with apple filling, then cover with more batter until ¾ full. Bake for 18-20 minutes until a toothpick comes out clean. Cool completely.
