Ingredients
- Beef (sirloin or tenderloin)
- Mushrooms (cremini or button)
- Onion
- Garlic
- Beef broth
- Sour cream
- Worcestershire sauce
- Dijon mustard
- Egg noodles or rice

- Fresh herbs (parsley, for garnish)
Instructions
- Slice the beef into thin strips against the grain to ensure tenderness.
- Clean and slice the mushrooms.
- Mince the garlic and chop the onion.
- Heat a skillet over medium-high heat. Add a tablespoon of olive oil or butter.
- Once hot, add the beef strips. Sear them until browned, about 2-3 minutes. Remove and set aside.
- In the same skillet, add a bit more oil if needed. Sauté the onions until translucent, then add the garlic.
- Toss in the mushrooms, allowing them to brown and release moisture, about 5-7 minutes.
- Return the beef to the skillet. Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring to combine.
- Bring to a simmer and let it bubble for about 10 minutes, allowing flavors to meld.
- Reduce heat, and stir in the sour cream. Do not boil once added, as it could curdle. If the sauce appears too thick, add a splash of broth.
- Prepare your egg noodles or rice according to package instructions. Serve the Beef Stroganoff over the bed of noodles or alongside rice, garnished with fresh parsley.
Notes
For a deeper flavor, marinate the beef in Worcestershire sauce for 30 minutes before cooking. If you enjoy a bit of heat, add a sprinkle of paprika or a dash of cayenne pepper.
