- 8 slices of brioche or Texas toast
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Butter for frying

Instructions
- In a skillet over medium heat, cook the crumbled beef sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside.
- In a large bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
- Flatten each slice of bread with a rolling pin. Place 2-3 tablespoons of cooked sausage on one end of each slice and roll tightly. Pinch the seams to seal.
- Dip each roll-up into the egg mixture, ensuring all sides are coated.
- In a large skillet, melt butter over medium heat. Cook the roll-ups seam side down for about 2-3 minutes on each side until golden brown and cooked through.
- Remove from the skillet and serve hot with maple syrup drizzled generously on top.
Notes
Ensure even cooking by not overcrowding the pan. For added flavor, consider using fresh herbs or cheese with the sausage.
