Ingredients
1 1/2 cups beef birria meat (slow-cooked or shredded)
2 1/2 cups birria consommé (spicy stew base)
4 cups cooked pasta (rigatoni, spaghetti, or macaroni)
1/2 cup diced white onions
1 jalapeño, sliced
1/3 cup chopped cilantro
1 scallion, minced
2 avocados, thinly sliced
1 cup Monterey Jack or Oaxaca cheese, shredded
Salt and lime to taste
Instructions
1. Heat your birria meat and consommé in a large pan over medium heat.
2. Add cooked pasta directly to the birria mixture and stir until fully coated.
