  • Author: Alessia Romano
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

Bold, cheesy, and packed with flavor, beef birria pasta fuses Mexican slow-braised birria beef with comforting pasta and cheese. A viral favorite perfect for dinner, potlucks, or meal prep, this fusion dish delivers heat, richness, and soul in every bite.

Ingredients

Scale

1 1/2 cups beef birria meat (slow-cooked or shredded)

2 1/2 cups birria consommé (spicy stew base)

4 cups cooked pasta (rigatoni, spaghetti, or macaroni)

1/2 cup diced white onions

1 jalapeño, sliced

1/3 cup chopped cilantro

1 scallion, minced

2 avocados, thinly sliced

1 cup Monterey Jack or Oaxaca cheese, shredded

Salt and lime to taste

Instructions

1. Heat your birria meat and consommé in a large pan over medium heat.

2. Add cooked pasta directly to the birria mixture and stir until fully coated.

3. Mix in shredded cheese while the pasta is still hot so it melts smoothly.

4. Taste and adjust with salt or a splash of lime if needed.

5. Plate the pasta, then top with onions, jalapeños, scallions, and cilantro.

6. Add avocado slices and an optional drizzle of crema for creaminess.

7. Serve hot with extra consommé on the side if desired.

Notes

Use rotisserie chicken and enchilada sauce for a quick version.

Rigatoni and macaroni hold sauce better than thin noodles.

Store leftovers in the fridge up to 4 days; add consommé when reheating.

Add crema, queso fresco, or pickled onions for extra flair.
