- 4 Russet potatoes
- 1 lb Ground beef or pulled beef
- 4 slices Bacon
- 1 packet Ranch seasoning
- 1 cup Cheddar cheese, shredded
- 1/2 cup Sour cream
Instructions
- Preheat your oven to 400°F (200°C). Wash and pierce the russet potatoes with a fork. Bake for about 45-60 minutes until tender.
- In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the fat in the skillet. Add the ground beef, seasoning with salt and pepper, and cook until browned.
- Mix ranch seasoning into the cooked beef according to package instructions, then fold in the chopped bacon.
- Once the potatoes are done, carefully slice them open and scoop out some of the insides. Mix this with sour cream and cheddar cheese, then fold in the beef and bacon mixture.
- Fill each potato with the mixture, sprinkle extra cheddar on top, and bake for an additional 15 minutes or until the cheese is melted.
Notes
For a healthier option, consider swapping russet potatoes for sweet potatoes or using turkey instead of beef.
