- 1 cup cheddar cheese, shredded
- ¾ cup BBQ sauce, plus more for drizzling
- 1 cup breadcrumbs (panko for extra crunch)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- Salt and pepper, to taste
- Fresh herbs (parsley or thyme), for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix ground beef, breadcrumbs, onion, garlic, cheddar, eggs, salt, pepper, and ½ cup BBQ sauce until just blended.
- Transfer the mixture to a baking dish, forming it into a loaf shape.
- Drizzle the top with more BBQ sauce.
- Bake for 1 hour or until the internal temperature reaches 160°F (70°C).
- Allow the meatloaf to rest for 10 minutes before slicing.
Notes
For added flavor, you can mix in chopped vegetables like zucchini or spinach into the meat mixture, or use jalapeños for a spicy kick.
