- 1 cup Mushrooms (cremini or shiitake)
- 3 Garlic cloves (fresh)
- 1 medium Onion (sweet or shallots)

- 2 tablespoons Olive Oil (extra virgin)
- Salt and Pepper (to taste)
Instructions
- Prep the ingredients by finely chopping the mushrooms, onion, and garlic, and chopping the herbs.
- In a large skillet, heat olive oil over medium heat and add the chopped mushrooms; cook for 5-7 minutes until browned.
- Add the diced onions and garlic, seasoning with salt and pepper; sauté until the onions are translucent, about 3-4 minutes.
- Stir in fresh herbs off the heat to let their aroma infuse.
- Slice the baguette or ciabatta, brush with olive oil, and toast in the oven at 400°F (200°C) for 5-7 minutes until golden.
- Assemble the bruschetta by placing the mushroom mixture on each piece of toasted bread.
- Garnish with extra herbs and serve immediately.
Notes
For a gluten-free option, substitute the bread with gluten-free alternatives. Experiment with different mushrooms or add roasted bell peppers for variety.
