  • 2 tablespoons Fresh Herbs (thyme, rosemary, or parsley)
  • 2 tablespoons Olive Oil (extra virgin)
  • Salt and Pepper (to taste)

Instructions

  1. Prep the ingredients by finely chopping the mushrooms, onion, and garlic, and chopping the herbs.
  2. In a large skillet, heat olive oil over medium heat and add the chopped mushrooms; cook for 5-7 minutes until browned.
  3. Add the diced onions and garlic, seasoning with salt and pepper; sauté until the onions are translucent, about 3-4 minutes.
  4. Stir in fresh herbs off the heat to let their aroma infuse.
  5. Slice the baguette or ciabatta, brush with olive oil, and toast in the oven at 400°F (200°C) for 5-7 minutes until golden.
  6. Assemble the bruschetta by placing the mushroom mixture on each piece of toasted bread.
  7. Garnish with extra herbs and serve immediately.

For a gluten-free option, substitute the bread with gluten-free alternatives. Experiment with different mushrooms or add roasted bell peppers for variety.
