Ingredients
- Fresh tagliatelle or fettuccine
- Beef sausage (spicy or sweet)
- Butternut squash, diced
- Garlic, minced
- Onion, chopped
- Olive oil
- Fresh sage or thyme
- Grated Parmesan cheese, for serving
Instructions
- Preheat your oven to 425°F (220°C).
- Chop the butternut squash into equal-sized cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
- Roast the squash for 25-30 minutes, flipping halfway through.
- While the squash roasts, bring salted water to a boil and cook pasta until al dente, reserving a cup of pasta water before draining.
- In a skillet, heat olive oil and sauté chopped onion and minced garlic until fragrant. Add sliced beef sausage and cook until browned.
- Toss the roasted squash into the skillet with the sausage, then add the drained pasta. Stir in reserved pasta water to achieve desired consistency.
- Add fresh herbs, adjusting seasoning as needed.
- Plate up and serve topped with grated Parmesan cheese.
