Ingredients

  • Fresh tagliatelle or fettuccine
  • Beef sausage (spicy or sweet)
  • Butternut squash, diced
  • Garlic, minced
  • Onion, chopped
  • Olive oil
  • Fresh sage or thyme
  • Grated Parmesan cheese, for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the butternut squash into equal-sized cubes, toss with olive oil, salt, and pepper, and spread on a baking sheet.
  3. Roast the squash for 25-30 minutes, flipping halfway through.
  4. While the squash roasts, bring salted water to a boil and cook pasta until al dente, reserving a cup of pasta water before draining.
  5. In a skillet, heat olive oil and sauté chopped onion and minced garlic until fragrant. Add sliced beef sausage and cook until browned.
  6. Toss the roasted squash into the skillet with the sausage, then add the drained pasta. Stir in reserved pasta water to achieve desired consistency.
  7. Add fresh herbs, adjusting seasoning as needed.
  8. Plate up and serve topped with grated Parmesan cheese.

Notes

Consider adding a splash of white wine for extra flavor. Store leftovers in an airtight container for up to three days or freeze for up to three months.
