Ingredients
- Egg noodles
- Fresh shiitake or cremini mushrooms
- Cream of mushroom soup
- Sharp cheddar cheese
- Thyme
- Garlic powder
- Optional vegetables (spinach, bell peppers)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the noodles according to package instructions until al dente, then drain and set aside.
- Sauté the mushrooms in a skillet over medium heat with olive oil until golden brown, then add minced garlic and sauté for an additional minute.
- In a large bowl, combine cream of mushroom soup with half of the cheese, then stir in sautéed mushrooms, noodles, and any additional vegetables.
- Pour the mixture into a greased baking dish and top with the remaining cheese.
- Bake for 25-30 minutes until bubbly and golden brown.
- Allow to cool for 5 minutes before serving.
Notes
For a crispy topping, sprinkle breadcrumbs mixed with melted butter before baking. Ensure noodles are al dente to avoid mushiness.
