Ingredients

  • Egg noodles
  • Fresh shiitake or cremini mushrooms
  • Cream of mushroom soup
  • Sharp cheddar cheese
  • Thyme
  • Garlic powder
  • Optional vegetables (spinach, bell peppers)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the noodles according to package instructions until al dente, then drain and set aside.
  3. Sauté the mushrooms in a skillet over medium heat with olive oil until golden brown, then add minced garlic and sauté for an additional minute.
  4. In a large bowl, combine cream of mushroom soup with half of the cheese, then stir in sautéed mushrooms, noodles, and any additional vegetables.
  5. Pour the mixture into a greased baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
  7. Allow to cool for 5 minutes before serving.

Notes
