Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 cup sour cream
  • 2 large eggs
  • ¼ cup milk (or buttermilk)
  • ¼ cup melted butter (or olive oil)
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a 9×9 inch baking pan or cast-iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the eggs, sour cream, milk, and melted butter until well blended.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  5. Pour the batter into your prepared pan and smooth the top.
  6. Bake for 20 to 25 minutes or until golden and a toothpick comes out clean.
  7. Allow to cool for a few minutes before slicing and serve warm with a pat of butter on top.

Notes

For a healthier twist, consider replacing half of the all-purpose flour with whole wheat flour. You could also add corn kernels or herbs to elevate the dish.
