Ingredients

3 lbs Amish Paste tomatoes, ripe

2 tbsp olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

1 tsp sea salt

1/2 tsp black pepper

1/4 cup fresh basil, chopped

1/4 cup red wine (optional)


Instructions

1. Blanch the Amish Paste tomatoes in boiling water for 30 seconds, then transfer to ice water.

2. Peel the skins and roughly chop the tomatoes.

3. In a large pot, heat olive oil over medium heat.

4. Add onion and sauté until translucent, about 5 minutes.

5. Add garlic and cook for 1 minute until fragrant.

6. Stir in chopped tomatoes, salt, and pepper.

7. Simmer uncovered for 45–60 minutes, stirring occasionally.

8. Add basil and red wine in the final 10 minutes of cooking.

9. Adjust seasoning to taste and serve over pasta.

Notes

For a smoother sauce, blend with an immersion blender before adding basil.

Freeze extra sauce in airtight containers for up to 6 months.
