Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 1 cup powdered sugar (for the glaze)
  • 2 tablespoons milk (for the glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy (2-3 minutes).
  4. Mix in the eggs one at a time, then add the vanilla extract and blend until smooth.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the diced apples gently.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the middle comes out clean. Cover with aluminum foil if the top browns too quickly.
  8. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar and milk until smooth, then drizzle over the cooled loaf.

Notes

Avoid overmixing the batter to prevent a dense loaf. Use firm apples for best texture.
