- ½ cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract

- 1 cup diced apples (Granny Smith or Honeycrisp)
- 1 cup powdered sugar (for the glaze)
- 2 tablespoons milk (for the glaze)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and nutmeg.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy (2-3 minutes).
- Mix in the eggs one at a time, then add the vanilla extract and blend until smooth.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the diced apples gently.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted in the middle comes out clean. Cover with aluminum foil if the top browns too quickly.
- Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar and milk until smooth, then drizzle over the cooled loaf.
Notes
Avoid overmixing the batter to prevent a dense loaf. Use firm apples for best texture.
