Description

A refreshing and vibrant cucumber salad mixed with creamy ranch dressing, perfect for summer gatherings.


Ingredients

  • 2 large Cucumbers (preferably English or Persian)
  • 1 cup Cherry Tomatoes (halved)
  • 1 small Red Onion (diced)
  • 1/2 cup Ranch Dressing (store-bought or homemade)
  • 2 tablespoons Fresh Dill (chopped; optional)
  • Salt and Black Pepper (to taste)
  • 1 tablespoon Lemon Juice (freshly squeezed)

Instructions

  1. Wash the cucumbers and tomatoes thoroughly. Peel cucumbers if desired.
  2. Dice the cucumbers into bite-sized pieces, slice the cherry tomatoes in half, and finely chop the red onion.
  3. In a large mixing bowl, combine chopped cucumbers, cherry tomatoes, and diced red onion. If using, sprinkle in fresh dill.
  4. Pour the ranch dressing over the vegetables and squeeze in fresh lemon juice. Toss gently to coat.
  5. Season with salt and black pepper to taste.
  6. Let the salad chill in the refrigerator for at least 30 minutes before serving.

Notes

Best served fresh, but can be made a few hours ahead. Will keep in the fridge for up to 2-3 days.
