A refreshing and vibrant cucumber salad mixed with creamy ranch dressing, perfect for summer gatherings.
Ingredients

- 2 large Cucumbers (preferably English or Persian)
- 1 cup Cherry Tomatoes (halved)
- 1 small Red Onion (diced)
- 1/2 cup Ranch Dressing (store-bought or homemade)
- 2 tablespoons Fresh Dill (chopped; optional)
- Salt and Black Pepper (to taste)
- 1 tablespoon Lemon Juice (freshly squeezed)
Instructions
- Wash the cucumbers and tomatoes thoroughly. Peel cucumbers if desired.
- Dice the cucumbers into bite-sized pieces, slice the cherry tomatoes in half, and finely chop the red onion.
- In a large mixing bowl, combine chopped cucumbers, cherry tomatoes, and diced red onion. If using, sprinkle in fresh dill.
- Pour the ranch dressing over the vegetables and squeeze in fresh lemon juice. Toss gently to coat.
- Season with salt and black pepper to taste.
- Let the salad chill in the refrigerator for at least 30 minutes before serving.
Notes
Best served fresh, but can be made a few hours ahead. Will keep in the fridge for up to 2-3 days.
