Ingredients

- 1 pound chicken breast (or thighs)
- 4 tablespoons unsalted butter
- 4 cloves fresh garlic, minced
- 1 tablespoon fresh thyme, parsley, or rosemary
- 8 ounces mushrooms (cremini or button), sliced
- 1 onion, chopped
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Chop the chicken into bite-sized pieces and season with salt and pepper.
- Mince the garlic and chop the onions and herbs.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken and cook until golden brown on all sides.
- Add the onions and garlic, stirring until fragrant, about 2 minutes.
- Add the mushrooms and continue to sauté until they’re tender and golden.
- Pour in the chicken broth and stir in the remaining butter along with your herbs. Let it simmer for about 5-10 minutes until the sauce thickens slightly.
- Once the sauce reaches your desired consistency, remove from heat. Garnish with additional herbs if desired and enjoy!
Notes
For a deeper flavor, marinate the chicken in the herbs and garlic for a couple of hours before cooking. Adjust the amount of butter for a creamier or lighter sauce as per your preference.
