  • 1 cup shiitake or cremini mushrooms, sliced
  • 1 cup mixed vegetables (bell peppers, broccoli, snap peas)
  • 2 tbsp olive oil
  • 2 scallions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prep your ingredients: Chop your chicken, vegetables, and mince the garlic.
  2. Marinate the chicken: Combine soy sauce, honey, and minced garlic in a bowl. Add the chicken and let it marinate for at least 30 minutes.
  3. Cook the noodles: Boil water in a large pot and cook the egg noodles according to package instructions. Drain and set aside.
  4. Sauté the chicken: In a large skillet, heat oil over medium-high heat. Add the marinated chicken (reserve the marinade) and cook until browned, about 5-7 minutes.
  5. Add vegetables and mushrooms: Toss in your chosen vegetables and mushrooms. Stir-fry for another 3-5 minutes until tender yet crisp.
  6. Combine everything: Add the cooked noodles and reserved marinade to the skillet. Toss together until noodles are coated in the sauce.
  7. Garnish: Finish with fresh scallions and sesame seeds.
