- 8 oz egg noodles (or rice noodles for gluten-free)
- 4 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey (or maple syrup)
- 1 cup shiitake or cremini mushrooms, sliced
- 1 cup mixed vegetables (bell peppers, broccoli, snap peas)
- 2 tbsp olive oil
- 2 scallions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prep your ingredients: Chop your chicken, vegetables, and mince the garlic.
- Marinate the chicken: Combine soy sauce, honey, and minced garlic in a bowl. Add the chicken and let it marinate for at least 30 minutes.
- Cook the noodles: Boil water in a large pot and cook the egg noodles according to package instructions. Drain and set aside.
- Sauté the chicken: In a large skillet, heat oil over medium-high heat. Add the marinated chicken (reserve the marinade) and cook until browned, about 5-7 minutes.
- Add vegetables and mushrooms: Toss in your chosen vegetables and mushrooms. Stir-fry for another 3-5 minutes until tender yet crisp.
- Combine everything: Add the cooked noodles and reserved marinade to the skillet. Toss together until noodles are coated in the sauce.
- Garnish: Finish with fresh scallions and sesame seeds.
Notes
Use a non-stick skillet for easier cleanup. Don’t overcrowd the pan when sautéing the chicken.
