Ingredients

  • 1 pound boneless skinless chicken thighs or breasts
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 12 teaspoons chili sauce (to taste)
  • 2 minced garlic cloves
  • 1 tablespoon grated ginger
  • 2 cups mixed vegetables (bell peppers, shredded carrots, broccoli, snap peas)
  • 1 tablespoon oil (for cooking)
  • Fresh cilantro or basil (for garnish)
  • Jasmine rice or rice noodles (for serving)

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, and chili sauce. Set aside.
  2. Cut chicken into bite-sized pieces, season with salt and pepper. In a skillet over medium-high heat, add oil and cook the chicken until golden and cooked through (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, add more oil if needed, sauté garlic and ginger for 30 seconds until fragrant. Add mixed vegetables and cook for 3-5 minutes until tender yet crisp.
  4. Return chicken to skillet, add peanut sauce and mix well. Cook for 2-3 minutes to heat through.
  5. Serve over warm jasmine rice or rice noodles, topped with chopped cilantro or basil.

Notes

Adjust the peanut sauce based on your preference for sweetness or spiciness; adding lime juice can brighten it up.
