Ingredients

  • 250g egg noodles (or any noodle of your choice)
  • 3 cloves of garlic, finely chopped
  • 3 tablespoons vegetable oil (or olive oil for a richer taste)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 34 fresh red chilies, sliced (adjust for heat preference)
  • 1 cup mushrooms, preferably shiitake or button mushrooms
  • Spring onions for garnish
  • Salt and pepper to taste

Instructions

  1. Boil the noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped garlic and sauté until golden. Stir in the sliced chilies and mushrooms, cooking until the mushrooms soften.
  3. Add soy sauce, oyster sauce, and sugar to the skillet. Stir until the sugar dissolves and the sauce slightly thickens.
  4. Add the cooked noodles to the skillet. Toss everything together, ensuring the noodles are well-coated with the spicy garlic chili sauce. Season with salt and pepper.
  5. Transfer to a serving dish and garnish with freshly chopped spring onions. Serve hot.

Notes

For added kick, sprinkle a bit of chili flakes before serving.
