Ingredients

- 250g egg noodles (or any noodle of your choice)
- 3 cloves of garlic, finely chopped
- 3 tablespoons vegetable oil (or olive oil for a richer taste)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 3–4 fresh red chilies, sliced (adjust for heat preference)
- 1 cup mushrooms, preferably shiitake or button mushrooms
- Spring onions for garnish
- Salt and pepper to taste
Instructions
- Boil the noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped garlic and sauté until golden. Stir in the sliced chilies and mushrooms, cooking until the mushrooms soften.
- Add soy sauce, oyster sauce, and sugar to the skillet. Stir until the sugar dissolves and the sauce slightly thickens.
- Add the cooked noodles to the skillet. Toss everything together, ensuring the noodles are well-coated with the spicy garlic chili sauce. Season with salt and pepper.
- Transfer to a serving dish and garnish with freshly chopped spring onions. Serve hot.
Notes
For added kick, sprinkle a bit of chili flakes before serving.
