Instructions
- Prepare your ingredients: Dice the chicken and vegetables, and rinse the rice thoroughly to remove excess starch.
- Sauté the veggies: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced onions, bell pepper, and celery, and sauté until soft and translucent, about 5-7 minutes.
- Brown the chicken: Add the diced chicken to the pan, seasoning it with a pinch of salt. Sauté until browned on all sides.
- Introduce the spices: Add the smoked paprika, cayenne pepper, and thyme, stirring for about one minute until fragrant.
- Incorporate rice and liquids: Stir in the rinsed rice, allowing it to toast slightly for 2 minutes. Then, add the diced tomatoes and broth, stirring to combine. Bring to a gentle boil.
- Simmer and cook: Lower the heat, cover the skillet, and let everything simmer for about 25-30 minutes.
- Add the shrimp: In the last 5 minutes of cooking, gently fold in the shrimp until cooked through.
- Rest and serve: Remove the skillet from heat and let it sit, covered, for an additional 5 minutes before serving.
