Instructions

  1. Prepare your ingredients: Dice the chicken and vegetables, and rinse the rice thoroughly to remove excess starch.
  2. Sauté the veggies: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced onions, bell pepper, and celery, and sauté until soft and translucent, about 5-7 minutes.
  3. Brown the chicken: Add the diced chicken to the pan, seasoning it with a pinch of salt. Sauté until browned on all sides.
  4. Introduce the spices: Add the smoked paprika, cayenne pepper, and thyme, stirring for about one minute until fragrant.
