Ingredients

  • 6 boneless, skinless chicken breasts
  • 8 ounces of cremini or button mushrooms, sliced
  • 1 cup Asiago cheese, freshly grated
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • Fresh parsley, for garnish
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Season both sides of the chicken breasts generously with salt and pepper.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil if necessary. Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
  4. Add the sliced mushrooms and thyme. Cook until mushrooms are golden brown and tender, approximately 5-6 minutes.
  5. Pour in the heavy cream and bring to a simmer. Gradually stir in the Asiago cheese, allowing it to melt and create a rich sauce. Adjust seasoning with salt and pepper.
  6. Return the chicken to the skillet, letting it simmer in the sauce for another 5-10 minutes, ensuring it is cooked through and fully coated.
  7. Garnish with freshly chopped parsley before serving. Enjoy over pasta, rice, or sautéed greens.

Notes

For a milder flavor, substitute Parmesan for Asiago. Experiment with different mushrooms for variety.
