- 6 boneless, skinless chicken breasts
- 8 ounces of cremini or button mushrooms, sliced
- 1 cup Asiago cheese, freshly grated
- 1 cup heavy cream
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- Fresh parsley, for garnish
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- Season both sides of the chicken breasts generously with salt and pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil if necessary. Add minced garlic and chopped shallots, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the sliced mushrooms and thyme. Cook until mushrooms are golden brown and tender, approximately 5-6 minutes.
- Pour in the heavy cream and bring to a simmer. Gradually stir in the Asiago cheese, allowing it to melt and create a rich sauce. Adjust seasoning with salt and pepper.
- Return the chicken to the skillet, letting it simmer in the sauce for another 5-10 minutes, ensuring it is cooked through and fully coated.
- Garnish with freshly chopped parsley before serving. Enjoy over pasta, rice, or sautéed greens.
Notes
For a milder flavor, substitute Parmesan for Asiago. Experiment with different mushrooms for variety.
