  • Canned beans (cannellini or navy beans)
  • Fresh spinach (or kale)

  • Garlic (minced)
  • Carrots (diced)
  • Celery (diced)
  • Chicken or vegetable broth
  • Fresh thyme
  • Bay leaves
  • Olive oil
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Stir until tender, about 5-7 minutes.
  2. Add sausage, breaking it apart, and cook until browned, about 8-10 minutes.
  3. Stir in the drained beans and pour in the broth. Bring to a simmer and let it cook for about 15 minutes.
  4. Add fresh spinach until wilted in the last few minutes of cooking.
  5. Season with thyme, bay leaves, salt, pepper, and red pepper flakes. Serve hot, garnished with crusty bread.
