- 2 cups elbow macaroni
- 1 cup pumpkin puree
- 2 cups mixed cheese (sharp cheddar and Gruyère)
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 cups milk
- 2 tbsp flour
- Herbs & spices (sage & nutmeg recommended, to taste)
Instructions
- Melt the butter in a large skillet or pot over medium heat. Add garlic and onions; cook until soft, about 3-4 minutes.
- Stir in flour until slightly golden; gradually whisk in milk and bring to a gentle simmer.
- Add pumpkin puree and spices; mix in cheese gradually until melted and smooth.
- Add uncooked pasta and pour in enough water or broth to just cover the pasta. Stir frequently for even cooking.
- After 10-12 minutes, check for doneness; remove from heat and let sit for a few minutes before serving. Garnish with parmesan or fresh herbs.
Notes
For extra flavor, consider adding sautéed mushrooms or spinach.
