One Pot Stove-Top Pumpkin Mac and Cheese

Description

A comforting and creamy dish that combines pumpkin and cheese with warm spices, perfect for chilly autumn days.


Ingredients

  • 2 cups elbow macaroni
  • 1 cup pumpkin puree
  • 2 cups mixed cheese (sharp cheddar and Gruyère)
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 cups milk
  • 2 tbsp flour
  • Herbs & spices (sage & nutmeg recommended, to taste)

Instructions

  1. Melt the butter in a large skillet or pot over medium heat. Add garlic and onions; cook until soft, about 3-4 minutes.
  2. Stir in flour until slightly golden; gradually whisk in milk and bring to a gentle simmer.
  3. Add pumpkin puree and spices; mix in cheese gradually until melted and smooth.
  4. Add uncooked pasta and pour in enough water or broth to just cover the pasta. Stir frequently for even cooking.
  5. After 10-12 minutes, check for doneness; remove from heat and let sit for a few minutes before serving. Garnish with parmesan or fresh herbs.

Notes

For extra flavor, consider adding sautéed mushrooms or spinach.
