- 12 oz linguine (fresh or dried)
- 1 cup authentic Parmigiano-Reggiano cheese, grated
- 1 lb ground meat (beef and pork mix)
- 4 cloves fresh garlic, chopped
- 1/4 cup unsalted butter
- 2 tbsp olive oil
- 1/4 cup fresh parsley, chopped
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
Instructions
- Combine ground meats, chopped garlic, parsley, grated parmesan, breadcrumbs, and egg in a large bowl. Season with salt and pepper, and mix until just combined. Roll into small balls and chill in the fridge for 20 minutes.
- In a large pot, boil salted water and cook the linguine until al dente, reserving a cup of pasta water.
- In a large skillet, melt butter and 2 tablespoons of olive oil. Add meatballs carefully, browning on all sides, then set aside.
- Add garlic and herbs to the skillet, cooking until aromatic. Toss in the al dente linguine, incorporating reserved pasta water as needed.
- Return meatballs to the skillet, gently combining with the linguine and sprinkle generously with parmesan before serving.
Notes
Allow the meatballs to brown well to lock in moisture. Add pasta water gradually for desired creaminess.
