A creamy and flavorful one-pot pasta recipe made famous by Meghan Markle. Simple, quick, and perfect for weeknight dinners.
Ingredients
24 ounces cherry tomatoes, halved
1 tablespoon extra virgin olive oil
1 teaspoon fine salt
2–3 cloves garlic, thinly sliced
8 ounces spaghetti or angel hair pasta
1 lemon, zested
¼ teaspoon red pepper flakes
3.5 cups boiling water
2–3 Swiss chard leaves, chopped
2–3 dino kale leaves, chopped
2 handfuls baby arugula
Garnishes: fresh basil, vegan Parmesan
Instructions
1. Heat a large pot over medium heat and add tomatoes, garlic, olive oil, and salt.
2. Cook for 2–3 minutes until tomatoes start to soften.
3. Add spaghetti and pour in boiling water just to cover.
4. Stir occasionally for 6–8 minutes until pasta is al dente.
5. Add kale and Swiss chard; cook until just wilted.
6. Stir in arugula, lemon zest, and red pepper flakes.
7. Adjust water if needed to achieve a creamy sauce.
8. Serve with fresh basil and vegan Parmesan.
Notes
Use gluten-free spaghetti for a GF version.
Leftovers keep well in the fridge for 2–3 days.
Add chickpeas or mozzarella for extra protein.
