Italian Wedding Soup with Parmesan Meatballs

Description

A comforting and hearty Italian Wedding Soup featuring flavorful Parmesan meatballs, fresh greens, and tiny pasta.


Ingredients

  • 1 pound ground beef, pork, or chicken
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil, thyme)
  • 1 tablespoon olive oil
  • 1 diced onion
  • 2 chopped carrots
  • 2 stalks celery
  • 2 cloves minced garlic
  • 8 cups chicken or vegetable broth
  • 2 cups tiny pasta (acini di pepe or orzo)
  • 4 cups fresh spinach or escarole
  • 1/2 cup additional grated Parmesan for serving
  • Squeeze of lemon juice

Instructions

  1. In a bowl, mix ground meat, bread crumbs, 1/2 cup Parmesan, egg, and season with salt, pepper, and herbs.
  2. Roll mixture into 1-inch meatballs.
  3. In a large skillet, heat olive oil over medium heat and brown the meatballs on all sides.
  4. In a large pot, sauté onion, carrots, and celery until softened, then add minced garlic and sauté for another minute.
  5. Pour in chicken broth, bring to a boil, and add pasta. Cook for 8-10 minutes until al dente.
  6. Add the browned meatballs and spinach, simmer for 5-7 minutes.
  7. Before serving, stir in additional Parmesan and adjust seasoning with salt, pepper, and lemon juice.
  8. Serve hot with extra Parmesan and crusty bread.

Notes

Make sure not to overcrowd the meatballs while browning for even cooking. Add greens at the end to maintain their color and nutrition.
