A comforting bowl of Italian Chicken Soup with Tagliatelle, rich in flavors and perfect for family gatherings.
Ingredients
- Bone-in, skin-on chicken thighs
- Fresh or dried tagliatelle
- Diced onions
- Diced carrots
- Diced celery
- Fresh thyme
- Bay leaves
- Fresh parsley
- Minced garlic
- Homemade or low-sodium chicken stock
- Salt and pepper, to taste
- Optional add-ins: mushrooms, peas, spinach, and Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery, and cook until softened, about 5-7 minutes. Stir in minced garlic and sauté for another minute.
- Season chicken with salt and pepper, add to the pot, and brown on all sides for about 5 minutes.
- Pour in the chicken stock, add thyme, bay leaves, and optional mushrooms. Bring to a boil, then reduce to a simmer.
- Simmer for 30-40 minutes until the chicken is cooked through. Remove chicken, shred it, and return to the pot.
- Cook tagliatelle in salted boiling water according to package instructions, drain and set aside.
- Stir chopped parsley and tagliatelle into the soup. Adjust seasoning with salt and pepper, and let it mingle for an additional 5 minutes.
- Ladle the soup into bowls and garnish with Parmesan, black pepper, and a drizzle of olive oil before serving.
Notes
For added flavor, consider roasting the chicken beforehand or adding a splash of white wine while sautéing the aromatics. Remember to taste as you go!
