Ingredients

  • Bone-in, skin-on chicken thighs
  • Fresh or dried tagliatelle
  • Diced onions
  • Diced carrots
  • Diced celery
  • Fresh thyme
  • Bay leaves
  • Fresh parsley
  • Minced garlic
  • Homemade or low-sodium chicken stock
  • Salt and pepper, to taste
  • Optional add-ins: mushrooms, peas, spinach, and Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery, and cook until softened, about 5-7 minutes. Stir in minced garlic and sauté for another minute.
  2. Season chicken with salt and pepper, add to the pot, and brown on all sides for about 5 minutes.
  3. Pour in the chicken stock, add thyme, bay leaves, and optional mushrooms. Bring to a boil, then reduce to a simmer.
  4. Simmer for 30-40 minutes until the chicken is cooked through. Remove chicken, shred it, and return to the pot.
  5. Cook tagliatelle in salted boiling water according to package instructions, drain and set aside.
  6. Stir chopped parsley and tagliatelle into the soup. Adjust seasoning with salt and pepper, and let it mingle for an additional 5 minutes.
  7. Ladle the soup into bowls and garnish with Parmesan, black pepper, and a drizzle of olive oil before serving.

Notes

For added flavor, consider roasting the chicken beforehand or adding a splash of white wine while sautéing the aromatics. Remember to taste as you go!
