Ingredients
- Fresh lemon juice (about 2 lemons)
- Honey (preferably local)
- Fresh thyme leaves (about 1 tablespoon)
- Water (still or sparkling, your choice)
- Ice cubes
- Lemon slices and thyme sprigs for garnish
Instructions
- Squeeze the juice from the lemons, ensuring you catch any seeds.
- Measure out a tablespoon of fresh thyme leaves and set aside.
- In a small saucepan, combine ½ cup of water with ¼ cup of honey over low heat. Stir until the honey dissolves completely. Remove from heat and add the thyme leaves. Let it steep for about 15 minutes.
- In a large pitcher, combine the lemon juice, the thyme-infused honey mixture, and 4 cups of cold water. Stir well, and add ice cubes.
- Pour the drink into glasses, adding a slice of lemon and a sprig of thyme to each for garnish. Enjoy immediately.
Notes
For a fizzy option, substitute still water with sparkling water. Consider muddling a few leaves into each glass for a more intense thyme flavor.
