- 1 whole chicken (bone-in thighs or boneless breasts)
- 4 cups egg noodles (or rotini/gluten-free alternatives)
- 2 medium onions, chopped
- 3 medium carrots, diced
- 3 stalks celery, diced
- 6–8 cups low-sodium chicken broth
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions, carrots, and celery, cooking until they soften, about 5-7 minutes.
- Incorporate your chicken pieces, seasoning with salt and pepper. Sear the chicken until browned, about 3-4 minutes per side.
- Add 6-8 cups of chicken broth to the pot, bringing it to a gentle boil. Scrape up any brown bits from the bottom.
- Toss in fresh thyme and bay leaves, allowing the flavors to meld together for about 30 minutes.
- Once the chicken is tender, remove it from the pot, shred it, and return the meat back to the soup.
- Stir in your noodles and cook until they are just tender, about 8-10 minutes.
- Stir in chopped parsley just before serving, and taste for seasoning, adjusting as needed.
Notes
For a thicker soup, consider adding cornstarch mixed with water. Don’t forget to taste and adjust seasoning throughout the cooking process.
