Description

Creamy, cheesy, and made in just one pot! 🍅 This quick tomato pasta is the ultimate comfort food with minimal cleanup. Perfect for busy weeknights!


Ingredients

  • 12 oz pasta (penne, fusilli, or spaghetti) 🍝

  • 1 tablespoon olive oil 🫒

  • 3 cloves garlic, minced 🧄

  • 1 small onion, diced 🧅

  • 3 cups vegetable or chicken broth 🥣

  • 1 can (14 oz) crushed tomatoes 🍅

  • ½ cup heavy cream 🥛

  • 1 teaspoon Italian seasoning 🌿

  • Salt and 🫙 pepper to taste

  • 1 cup shredded mozzarella cheese 🧀

  • ½ cup grated Parmesan cheese 🧀

  • Fresh basil or parsley for garnish 🌱


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.

  • Add pasta, broth, and crushed tomatoes. Bring to a boil, then reduce heat and simmer for 10–12 minutes, stirring occasionally.

  • Once pasta is al dente and liquid has mostly absorbed, stir in heavy cream, Italian seasoning, and season with salt and pepper.

  • Add mozzarella and Parmesan, stirring until melted and creamy.

 

  • Serve hot, garnished with fresh basil or parsley. 🌱

  • Use whole wheat or gluten-free pasta for dietary preferences.

  • Stir frequently to prevent pasta from sticking.
