- 1 package cheese-stuffed tortellini (fresh or frozen)
- 1 pound ground beef (or lean ground turkey)
- 1 jar tomato sauce (marinara or homemade)
- 1 onion, chopped
- 2–3 cloves garlic, minced
- 1 cup sliced mushrooms (cremini or button)
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- Fresh basil and oregano (to taste)
- Salt and pepper (to taste)
- 1 tablespoon olive oil
Instructions
- Heat a large oven-safe skillet over medium heat and add olive oil.
- Add the chopped onion and minced garlic; sauté until softened and fragrant, about 2-3 minutes.
- Add ground beef, breaking it up with a wooden spoon, and cook until browned and cooked through. Drain excess fat if necessary.
- Stir in the sliced mushrooms and cook until softened, about 3-4 minutes.
- Pour in the tomato sauce and stir to combine. Season with salt, pepper, and herbs, and let simmer for about 5 minutes.
- Gently fold in the tortellini until evenly distributed.
- Sprinkle mozzarella and parmesan over the top.
- Preheat your oven to 375°F (190°C) and bake for about 25 minutes, or until the cheese is bubbly and golden brown.
Notes
For extra flavor, add red pepper flakes or spinach. Ensure tortellini is al dente before baking.
