Description

A warm and comforting Crockpot White Chicken Chili featuring tender chicken, creamy white beans, and zesty spices, perfect for chilly evenings.


Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 cans white beans (cannellini or great northern), rinsed and drained
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced green chilies
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 ounces cream cheese or sour cream
  • Fresh cilantro, jalapeño slices, and lime for garnish

Instructions

  1. Chop the onion and mince the garlic.
  2. Add onions, garlic, chicken, beans, diced green chilies, and chicken broth to the slow cooker.
  3. Sprinkle in ground cumin, oregano, and season with salt and pepper.
  4. Cover and cook on low for 6-8 hours.
  5. About 30 minutes before serving, shred the chicken in the slow cooker and stir in cream cheese or sour cream.
  6. Garnish with chopped cilantro, jalapeño, or lime before serving.

Notes

For a lighter version, substitute cream cheese with Greek yogurt. Adjust the spiciness with jalapeños according to preference.
