- 1 pound boneless, skinless chicken breasts or thighs
- 2 cans white beans (cannellini or great northern), rinsed and drained
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can diced green chilies
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 ounces cream cheese or sour cream
- Fresh cilantro, jalapeño slices, and lime for garnish
Instructions
- Chop the onion and mince the garlic.
- Add onions, garlic, chicken, beans, diced green chilies, and chicken broth to the slow cooker.
- Sprinkle in ground cumin, oregano, and season with salt and pepper.
- Cover and cook on low for 6-8 hours.
- About 30 minutes before serving, shred the chicken in the slow cooker and stir in cream cheese or sour cream.
- Garnish with chopped cilantro, jalapeño, or lime before serving.
Notes
For a lighter version, substitute cream cheese with Greek yogurt. Adjust the spiciness with jalapeños according to preference.
