  • 2 cups shredded cheddar cheese (or a mix of your favorites)
  • 6 slices of bacon, cooked until crispy and crumbled
  • 1 medium onion, finely chopped
  • 1 cup diced mushrooms (shiitake or cremini)
  • Sour cream, for drizzling
  • Chopped green onions, for garnish
  • Fresh parsley or chives, finely chopped
  • Oil, for frying (olive oil or butter)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thinly slice your potatoes with a mandoline or sharp knife, rinse under cold water to remove excess starch, then pat dry.
  3. In a large skillet, heat enough oil over medium heat to partially submerge the potato slices. Fry the potatoes in batches until golden and crispy, about 5-7 minutes per side. Drain on paper towels, and season with salt and pepper while hot.
  4. Add more oil if needed and sauté the chopped onions and mushrooms over medium heat until fragrant and caramelized, about 5-8 minutes.
  5. On a large baking sheet, layer the crispy potato slices. Sprinkle the sautéed onions and mushrooms, followed by crumbled bacon and shredded cheese.
  6. Bake in the preheated oven for about 10-12 minutes, until the cheese is melted and bubbly.
  7. Drizzle sour cream over the top and sprinkle with chopped green onions and fresh herbs before serving.
  8. Enjoy immediately while the nachos are hot and cheese is gooey.

Notes

For a vegetarian option, omit the bacon and consider using sweet potatoes for a nutritious twist.
