- 4 medium-sized russet or Yukon Gold potatoes, washed and sliced thinly
- 2 cups shredded cheddar cheese (or a mix of your favorites)
- 6 slices of bacon, cooked until crispy and crumbled
- 1 medium onion, finely chopped
- 1 cup diced mushrooms (shiitake or cremini)
- Sour cream, for drizzling
- Chopped green onions, for garnish
- Fresh parsley or chives, finely chopped
- Oil, for frying (olive oil or butter)
Instructions
- Preheat your oven to 400°F (200°C).
- Thinly slice your potatoes with a mandoline or sharp knife, rinse under cold water to remove excess starch, then pat dry.
- In a large skillet, heat enough oil over medium heat to partially submerge the potato slices. Fry the potatoes in batches until golden and crispy, about 5-7 minutes per side. Drain on paper towels, and season with salt and pepper while hot.
- Add more oil if needed and sauté the chopped onions and mushrooms over medium heat until fragrant and caramelized, about 5-8 minutes.
- On a large baking sheet, layer the crispy potato slices. Sprinkle the sautéed onions and mushrooms, followed by crumbled bacon and shredded cheese.
- Bake in the preheated oven for about 10-12 minutes, until the cheese is melted and bubbly.
- Drizzle sour cream over the top and sprinkle with chopped green onions and fresh herbs before serving.
- Enjoy immediately while the nachos are hot and cheese is gooey.
Notes
For a vegetarian option, omit the bacon and consider using sweet potatoes for a nutritious twist.
