Ingredients
2 cups cooked turkey, shredded or diced
12 oz spaghetti or linguine
1 cup mushrooms, sliced (button or cremini)
3 tbsp butter
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream (or half-and-half)
1/2 cup freshly grated Parmesan cheese
2 tsp minced garlic (or 1/2 tsp dried garlic)
Salt and pepper to taste
1 tbsp chopped fresh parsley and thyme
Instructions
1. Cook pasta until al dente, drain and set aside.
2. In a skillet, melt butter over medium heat and sauté mushrooms until golden.
3. Add garlic and cook for 1 minute more.
4. Stir in flour to make a roux.
5. Slowly whisk in chicken broth, stirring constantly to avoid lumps.
6. Add heavy cream and cook until sauce thickens.
7. Stir in Parmesan cheese, salt, pepper, and herbs.
8. Fold in turkey and pasta until well coated with sauce.
9. Transfer mixture to a baking dish, sprinkle with Parmesan.
10. Bake at 350°F (175°C) for 25 minutes until golden and bubbling.
Notes
Substitute turkey with cooked chicken if needed.
Add peas or spinach for extra nutrition and color.
Use Gruyère cheese instead of Parmesan for a deeper flavor.
