- Salt and Pepper, to taste
- Optional: Paprika or Cayenne, to taste
Instructions
- Season chicken breasts generously with salt, pepper, and your favorite spices. Slice them into bite-sized pieces for even cooking.
- Begin boiling salted water and cook linguine according to package instructions for al dente texture.
- In a large skillet, heat olive oil over medium-high heat and add the chicken pieces. Cook until golden brown, about 5-7 minutes.
- Stir in sliced mushrooms and cook until softened, about 4-5 minutes. Add minced garlic and chopped onions, sautéing for another 2 minutes until fragrant.
- Pour in heavy cream, bringing it to a gentle simmer. Let it thicken slightly while stirring continuously.
- Toss in fresh herbs and adjust seasoning with salt, pepper, and optional paprika.
- Once the pasta is cooked, drain and add it directly to the skillet with the sauce. Toss everything together until the linguine is coated in the creamy goodness.
- Garnish with extra herbs and a sprinkle of fresh parmesan if desired. Plate and serve warm.
Notes
For a lighter version, consider using half-and-half or milk instead of heavy cream. This dish pairs well with a side salad and white wine.
