- 8 oz Fettuccine or penne pasta
- 1 lb Boneless, skinless chicken breasts, cut into bite-sized pieces
- 2–3 tbsp Cajun seasoning
- 1 cup Heavy cream
- 2 tbsp Unsalted butter
- 3 cloves Garlic, minced
- 1 medium Onion, diced
- 8 oz Mushrooms, sliced (cremini or button)
- 1/2 cup Freshly grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Cook the Pasta: Boil a large pot of salted water. Add the chosen pasta and cook until al dente. Drain and reserve about 1/2 cup of pasta water.
- Sauté the Chicken: Melt 2 tablespoons of butter in a skillet over medium heat. Add chicken pieces, season with Cajun seasoning, and cook until golden brown. Remove from skillet and set aside.
- Prepare the Aromatics: In the same skillet, add the remaining butter. Sauté diced onion and minced garlic until translucent.
- Cook the Mushrooms: Add sliced mushrooms and cook until tender.
- Create the Sauce: Pour in the heavy cream, stir to combine, and let it simmer for about 5 minutes or until slightly thickened.
- Combine Ingredients: Return the cooked chicken to the skillet with the drained pasta and splash of reserved pasta water. Stir well to coat everything in the sauce.
- Finish with Cheese: Add freshly grated Parmesan until melted. Adjust seasoning if necessary.
- Serve: Garnish with chopped parsley and serve hot.

For added flavor, consider grilling the chicken or mixing in shrimp for a variety of textures.
