A comforting dish featuring rich creamy sauce and Cajun-seasoned chicken that blends Italian roots with Southern flair.


Ingredients

  • 8 oz Fettuccine or penne pasta
  • 1 lb Boneless, skinless chicken breasts, cut into bite-sized pieces
  • 23 tbsp Cajun seasoning
  • 1 cup Heavy cream
  • 2 tbsp Unsalted butter
  • 3 cloves Garlic, minced
  • 1 medium Onion, diced
  • 8 oz Mushrooms, sliced (cremini or button)
  • 1/2 cup Freshly grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Pasta: Boil a large pot of salted water. Add the chosen pasta and cook until al dente. Drain and reserve about 1/2 cup of pasta water.
  2. Sauté the Chicken: Melt 2 tablespoons of butter in a skillet over medium heat. Add chicken pieces, season with Cajun seasoning, and cook until golden brown. Remove from skillet and set aside.
  3. Prepare the Aromatics: In the same skillet, add the remaining butter. Sauté diced onion and minced garlic until translucent.
  4. Cook the Mushrooms: Add sliced mushrooms and cook until tender.
  5. Create the Sauce: Pour in the heavy cream, stir to combine, and let it simmer for about 5 minutes or until slightly thickened.
  6. Combine Ingredients: Return the cooked chicken to the skillet with the drained pasta and splash of reserved pasta water. Stir well to coat everything in the sauce.
  7. Finish with Cheese: Add freshly grated Parmesan until melted. Adjust seasoning if necessary.
  8. Serve: Garnish with chopped parsley and serve hot.

Notes

For added flavor, consider grilling the chicken or mixing in shrimp for a variety of textures.
