- 8 oz lasagna noodles, broken
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz cremini mushrooms, sliced
- 4 cups fresh spinach
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried Italian herbs
- 1 pinch nutmeg
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant (2-3 minutes).
- Toss in sliced mushrooms and cook until tender and golden (5-7 minutes). Season with salt and pepper.
- Pour in the broth, scraping the bottom of the pot to incorporate all browned bits, and bring to a simmer.
- Add the broken lasagna noodles and cook according to package instructions (10-12 minutes).
- Lower the heat and stir in the heavy cream and Parmesan cheese until melted and creamy.
- Add fresh spinach, dried Italian herbs, and a pinch of nutmeg. Let it wilt (2-3 minutes). Adjust seasoning as needed.
- Ladle into bowls, garnishing with extra Parmesan and fresh basil. Serve with crusty bread.
