Ingredients

  • 8 oz lasagna noodles, broken
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 8 oz cremini mushrooms, sliced
  • 4 cups fresh spinach
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs
  • 1 pinch nutmeg

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sauté until fragrant (2-3 minutes).
  2. Toss in sliced mushrooms and cook until tender and golden (5-7 minutes). Season with salt and pepper.
  3. Pour in the broth, scraping the bottom of the pot to incorporate all browned bits, and bring to a simmer.
  4. Add the broken lasagna noodles and cook according to package instructions (10-12 minutes).
  5. Lower the heat and stir in the heavy cream and Parmesan cheese until melted and creamy.
  6. Add fresh spinach, dried Italian herbs, and a pinch of nutmeg. Let it wilt (2-3 minutes). Adjust seasoning as needed.
  7. Ladle into bowls, garnishing with extra Parmesan and fresh basil. Serve with crusty bread.
