A comforting Cheesy Meatloaf Casserole that combines ground meat, breadcrumbs, sautéed vegetables, and gooey cheese for a delightful family meal.


Ingredients

  • 1 lb ground beef or turkey
  • 1 cup breadcrumbs (regular or panko)
  • 2 large eggs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 1 tsp dried thyme or parsley (optional)
  • 1 tbsp olive oil, for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté the chopped onion and minced garlic until fragrant.
  3. In a large mixing bowl, combine ground meat, sautéed onions, breadcrumbs, eggs, salt, pepper, and optional herbs.
  4. Fold in half of the cheese and chopped mushrooms until evenly mixed.
  5. Transfer the mixture to a greased casserole dish, flattening the top with a spatula.
  6. Top with the remaining cheese.
  7. Bake for 45-55 minutes or until internal temperature reaches 160°F (70°C) and cheese is golden.
  8. Let it rest for 10 minutes before slicing.
