- 2 pounds beef chuck roast or brisket
- 1 bottle (12 ounces) Belgian beer (Dubbel or Saison)
- 2 yellow onions, chopped
- 3 carrots, chopped
- 4 cloves garlic, minced
- 8 ounces mushrooms (button, cremini, or shiitake), sliced
- 2 sprigs fresh thyme
- 2 bay leaves
- 4 cups beef broth
- 2 tablespoons olive oil
Instructions
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Season beef with salt and pepper, then sear on all sides until browned.
- Remove the beef and set aside. In the same pot, add onions and caramelize until golden brown. Add minced garlic and cook for a minute until fragrant.
- Stir in chopped carrots and mushrooms, letting them soften for a few minutes. Pour in the Belgian beer and scrape any browned bits from the bottom.
- Return the beef to the pot, add enough beef broth to cover, and toss in thyme and bay leaves. Bring to a simmer.
- Reduce the heat to low, cover, and cook slowly for 2 ½ to 3 hours, or longer for the best flavor and tenderness.
- Before serving, taste and adjust seasoning as needed. Serve hot with crusty bread or mashed potatoes.
Notes
For a twist, substitute beef with lamb or use sweet potatoes for added sweetness. Letting the stew rest after cooking enhances the flavors.
